Pamonha

Brazilian tamales

A traditional Brazilian dish made primarily from sweet corn. It resembles Mexican tamales but has distinct characteristics and preparation methods.

Pamonha has its roots in Brazilian indigenous culture, with the name derived from the Tupi word “pamunha,” which means “sticky” or “soft”—aptly describing the dish’s texture. It is particularly popular in the northeastern regions of Brazil, as well as in Minas Gerais and São Paulo.

The primary ingredients of pamonha include:

  • Fresh sweet corn: The main component, typically grated or blended.
  • Coconut milk: Often added for richness and flavor.
  • Sugar: Used in sweet variations.
  • Butter and salt: For additional flavor.
