Ingredients

  • Cream Cheese (Full Fat): 250 grams
  • Butter: 50 grams
  • Stevia (Granulated): 1/3 cup
  • Vanilla Extract: 1 1/2 tsp
  • Raw Cocoa Powder: 1/2 cup
  • Thickened Cream: 1/2 cup
  • Mixed Nuts: 100 grams (Almonds, Macadamia, Cashews, Walnuts)
  • Coconut Oil: 2 tbsp
  • Stevia (Granulated): 2 tsp

Instructions

  1. Prepare the base: Blitz the 100g of mixed nuts with 2 tablespoons of coconut oil and 2 teaspoons of granulated stevia until combined.
  2. Prepare the filling: In a separate bowl, combine the cream cheese and butter. Whisk on a medium pace, then add the vanilla extract and cocoa powder. Gradually pour in the thickened cream, continuing to whisk until all ingredients are smooth and fully combined.
  3. Assemble: Place an equal amount of the nut mixture into eight silicon muffin holes to form the crust. Pour an equal amount of the batter on top of the crusts. Note: You may find the mixture is enough for ten muffin-sized cheesecakes.
