MANGO CHUTNEY

10 large green mangoes
1 cup raisins
2 cloves garlic, pounded
1 medium onion
1 ½ tbsp. white mustard seed
2 chili peppers
1 tbsp. ground ginger
1 c. lime juice

Slice the large green mangoes into strips.
Combine sliced mangoes and other ingredients.
Cover and let stand overnight.
Simmer 3 hours, slowly stirring so as not to scorch.
